At every party there is someone quietly scanning the menu, hoping they will not have to explain themselves at the front of a line. This post is for the host who wants that person fed well, not just accommodated.
What we offer
Gluten free and vegan options are available at our events on request. They are prepared as part of the same live, fire-baked service as everything else, so the guest who cannot have the regular dough still gets a pizza that comes off the oven hot instead of a sad foil-wrapped alternative from a cooler.
What we need from you
Two things during planning, and both take one sentence. First, the counts: how many gluten free, how many vegan. They count inside your total guest number, not on top of it, so the pizza math stays simple. Second, the severity: there is a real difference between a preference and a serious allergy, and knowing which one we are cooking for changes how we handle preparation. A Certified Food Protection Manager is on site at every event, and this is exactly the kind of thing they are there to manage.
A word of honesty about celiac guests
We prepare gluten free pizzas with care, but our mobile kitchen also handles regular wheat dough during the same service. For guests with celiac disease or severe allergies, tell us in advance so we can talk through the preparation and let the guest make an informed call. We would rather have that conversation before the event than promise something a shared kitchen cannot fully guarantee. Hosts respect it, and more importantly, so do the guests it protects.
The menu still tastes like the menu
The Vegetariana with its San Marzano blend sauce, red onion, mushrooms, and Kalamata olives converts naturally, and menus are built around your crowd during planning either way. The goal is that the gluten free guest and the vegan guest talk about the same thing as everyone else on the drive home: the pizza.
